INGREDIENTS

5 onions...

5 tbs olive oil...

200 ml red wine...

3 tbs all-purpose flour...

1 lt chicken or beef stock ...

3 branches of thyme ...

250 gr. DODONI graviera cheese...

salt & pepper...

PREPARATION

Thinly slice the onions. 
Slice the bread.
Grate the graviera cheese.

 

EXECUTION

Heat the oil in a large heavy-based pan. Add the onions and fry with the lid on for 10 mins until soft. Add salt and pepper and the red wine. Cook for 2 minutes and sprinkle in the flour and thyme. 
Let cook for two minutes, stirring constantly and add the stock. 

Cover and simmer for 15-20 mins.

Ladle the soup into heatproof bowls. Put a slice or two of toast on top of the bowls of soup, and pile on the cheese. Grill until melted.
