Bruschetta with caramelized cherry tomatoes, galotyri and basil

INGREDIENTS

250 gr. cherry tomatoes, cut in half...

1 traditional or yeast bread ...

1 package DODONI galotyri...

fresh basil, chopped finely ...

salt...

pepper, freshly ground...

olive oil...

PREPARATION

On a sheet pan covered with baking paper, place 250gr cherry tomatoes, each sliced in half. Sprinkle with salt and a generous amount of freshly ground pepper. Pour some olive oil over the cherry tomatoes. Grill in a pre-heated oven, at 200oC, for 20-25 minutes until caramelized.

EXECUTION

In the meantime, cut the bread into thick slices and place on a sheet pan covered with baking paper. Sprinkle the slices with salt and brush with olive oil. When the tomatoes are ready, remove from oven. Then, place the bread slices in the oven and bake for 10 minutes until they are lightly browned around the edges. Remove from oven and let them cool for 5 minutes. Spread 2 tbsp DODONI galotyri on each slice. Top with a few caramelized cherry tomatoes on each slice and garnish with finely cut fresh basil.
