INGREDIENTS

250 g. Carolina rice...

5 ripe tomatoes...

1 tbsp tomato paste...

1 large onion...

2 cloves garlic...

οlive oil...

salt & pepper ...

½ liter water...

200 γρ. DODONI Light Cheese...

fresh oregano...

PREPARATION

Grate the tomatoes on a coarse grater. Finely chop the onion and garlic. Break the cheese with your hands and keep in the fridge until serving.

EXECUTION

Place in a medium saucepan 5-6 tablespoons of oil and saute the onion over low heat for about 15 minutes. We want the onion to be transparent and caramelized. Add the garlic and saute for another 1-2 minutes. Add the rice and tomato paste and saute for 3 minutes. Add the tomatoes, half of the water and season. Boil over low heat, stirring frequently and gradually adding all of the water. When rice is ready, remove from heat. The food should not be watery nor too thick, so if necessary add a little water or boil the food a little more. Serve with DODONI Light cheese and fresh oregano leaves.
