INGREDIENTS

1 cup quinoa...

2 cups water...

1 lemon, juice and zest...

1/2 parsley...

1/2 red cabbage...

1 red pepper...

1 spring onion...

2 tb DODONI galotiri...

salt & pepper ...

olive oil...

cumin...

PREPARATION

Wash and drain the quinoa and place in a pan with 2 cups of water. Simmer for about 20’ or until the water is almost absorbed. Remove from heat, cover with a towel and let cold. Mince the cabbage, spring onion, parsley and pepper. Make the lemon juice and keep the zest.

EXECUTION

Place quinoa, minced vegetables, lemon juice and zest in a bowl. Add salt, pepper, cumin and olive oil and toss well. Add two tablespoons of galotiri on top. It is optional that you garnish with pumpkin seeds.
